J&rsquo;ai fait un m\u00e9lange de farine de sarrasin et de poudre de noisettes pour que ces madeleines puissent aussi convenir aux intol\u00e9rants au gluten. Le gla\u00e7age au chocolat les rend encore plus gourmandes !<\/p>\n\n\n\n<p>Je vous remets ici quelques astuces pour obtenir une jolie bosse sur les madeleines. Pour la cuisson, je vous conseille de mettre le four sur position convection naturelle (plut\u00f4t que chaleur tournante). Je vous conseille aussi de r\u00e9partir la p\u00e2te dans un moule \u00e0 madeleines puis r\u00e9frig\u00e9rer pendant au moins 3 heures (pour cr\u00e9er un choc de temp\u00e9rature). Il est aussi conseill\u00e9 de ne pas utiliser un moule en silicone mais je n\u2019avais que \u00e7a sous la main alors j\u2019ai tent\u00e9 et j\u2019ai quand m\u00eame r\u00e9ussi \u00e0 obtenir une
