Tournez-vous donc vers le petit \u00e9peautre ! Avant de me lancer dans l&rsquo;alimentation \u00e0 IG bas, cette c\u00e9r\u00e9ale m&rsquo;\u00e9tait compl\u00e8tement inconnue. Et aujourd&rsquo;hui, c&rsquo;est devenu un aliment phare de mon alimentation. Pour changer des classiques, essayez donc ce risotto d&rsquo;\u00e9peautre au chou romanesco et mozzarella.<\/p>\n\n\n\n<p>Pour diminuer le temps de cuisson de ce risotto d&rsquo;\u00e9peautre au chou romanesco, faites tremper le petit \u00e9peautre pendant une nuit. C&rsquo;est une astuce pour gagner environ 15 minutes de cuisson mais c&rsquo;est tout \u00e0 fait facultatif et je ne le fais pas de fa\u00e7on r\u00e9guli\u00e8re. Je vous conseille de prendre du petit \u00e9peautre plut\u00f4t que du grand \u00e9peautre, c&rsquo;est bien meilleur au go\u00fbt et sur le plan nutritionnel. Le petit \u00e9peautre contient peu de gluten, alors que le grand \u00e9peautre en contient davantage. Il peut donc convenir aux personnes l\u00e9g\u00e8rement intol\u00e9rantes au gluten.<\/p>\n\n\n\n<p>Dans cette recette, j&rsquo;adore le mariage des saveurs et des textures. Avec la mozzarella fondante et la fermet\u00e9 des fleurettes de chou romanesco, c&rsquo;est un d\u00e9lice. Si vous adorez ce l\u00e9gume, sachez qu&rsquo;il s&rsquo;associe parfaitement avec le citron, comme je l&rsquo;ai fait dans cette recette de <a
