Je les avais servies avec des p\u00e2tes et une sauce cr\u00e9meuse. Ici, la pita aux boulettes v\u00e9g\u00e9tales est une belle fa\u00e7on de les d\u00e9cliner autrement, dans une version plus conviviale et facile \u00e0 emporter. Je revisite la street food !<\/p>\n\n\n\n<p>Dans cette recette, je les glisse dans un pain pita. Je vous conseille de le choisir \u00e0 base de farine compl\u00e8te afin de limiter l\u2019index glyc\u00e9mique et d\u2019apporter davantage de sati\u00e9t\u00e9. On agr\u00e9mente aussi avec des l\u00e9gumes frais : des tomates juteuses, du concombre croquant et quelques feuilles de salade. R\u00e9sultat : un repas \u00e9quilibr\u00e9, color\u00e9 et nourrissant, parfait pour un d\u00e9jeuner rapide mais sain. Et pour sublimer le tout, on ajoute une sauce onctueuse et pleine de go\u00fbt \u00e0 base de sumac et d&rsquo;herbes fra\u00eeches.<\/p>\n\n\n\n<hr class=\"wp-block-separator Egouttez-les pour retirer l\u2019eau afin que la p\u00e2te des boulettes ne soit pas trop humide.<\/li><li id=\"wpzoom-rcb-direction-step-69793a8c00f41\" class=\"direction-step\">Dans le bol d\u2019un mixeur, d\u00e9posez les lentilles cuites, les champignons cuits, l\u2019oignon rouge \u00e9pluch\u00e9, le persil, l\u2019aneth et l\u2019\u0153uf. Salez et poivrez, puis mixez jusqu\u2019\u00e0 obtenir une texture homog\u00e8ne, proche d\u2019une p\u00e2te, avec encore quelques tr\u00e8s petits morceaux. Ajoutez ensuite la farine d\u2019\u00e9peautre T150 et m\u00e9langez. Ajustez la quantit\u00e9 si n\u00e9cessaire : la p\u00e2te doit \u00eatre souple mais non collante. Si elle vous semble trop humide, ajoutez un peu de farine, sans exc\u00e8s, afin de conserver des boulettes bien moelleuses. Formez 12 boulettes \u00e0 la main, puis disposez-les sur une plaque recouverte de papier cuisson.<\/li><li id=\"wpzoom-rcb-direction-step-69793a8c00f42\" class=\"direction-step\">Huilez-les \u00e0 l\u2019aide d\u2019un pinceau avec de l\u2019huile d\u2019olive. Enfournez 15 minutes \u00e0 180\u00b0C.<\/li><li id=\"wpzoom-rcb-direction-step-17774898770741469\" class=\"direction-step\">Pendant ce temps, d\u00e9taillez la sucrine en feuilles puis lavez-les. Coupez les tomates cerises en quartiers. Lavez et coupez le concombre en rondelles. Egrainez la grenade.<\/li><li id=\"wpzoom-rcb-direction-step-17774899495042596\" class=\"direction-step\">Pr\u00e9parez la sauce en mixant le skyr avec la menthe et l&rsquo;aneth lav\u00e9es et essor\u00e9es et le jus d&rsquo;un demi citron vert.
