C&rsquo;est une sp\u00e9cialit\u00e9 corse pr\u00e9par\u00e9e \u00e0 base de brocciu (un fromage frais corse), de pain rassis, d&rsquo;herbes (comme la menthe ou le persil), d&rsquo;\u0153ufs, et parfois d&rsquo;\u00e9pinards. Ces boulettes sont fa\u00e7onn\u00e9es \u00e0 la main, puis cuites dans de l&rsquo;eau bouillante avant d&rsquo;\u00eatre gratin\u00e9es au four avec une sauce tomate. Ayant \u00e9t\u00e9 inspir\u00e9e par cette recette, je vous propose donc ici des boulettes d&rsquo;\u00e9pinards et ricotta gratin\u00e9es au four dans une d\u00e9licieuse sauce tomate aux oignons. Vous pouvez humidifier l\u00e9g\u00e8rement vos mains entre chaque boulette pour faciliter le fa\u00e7onnage. Faites le revenir dans une po\u00eale avec 2 c \u00e0 s d&rsquo;huile d&rsquo;olive. Apr\u00e8s 3 minutes de cuisson, ajoutez 1 c \u00e0 s de vinaigre de balsamique et 2 gousses d&rsquo;ail \u00e9pluch\u00e9es et hach\u00e9es. Salez, poivrez, m\u00e9langez et laissez cuire une quinzaine de minutes.
