Vous pouvez bien s\u00fbr remplacer le riz basmati par du couscous de bl\u00e9 complet. Pour les aubergines, je les ai coup\u00e9es en d\u00e9s puis faites revenir dans de l&rsquo;huile d&rsquo;olive (environ 3 c \u00e0 s pour 4 personnes) avec des \u00e9pices. J&rsquo;ai utilis\u00e9 les m\u00eames que pour la viande :  cannelle, coriandre moulue, cumin moulu et curcuma. J&rsquo;ai ajout\u00e9 un fond d&rsquo;eau pour faciliter la cuisson et j&rsquo;ai attendu qu&rsquo;elles sont bien fondantes. Dans une po\u00eale avec 2 c \u00e0 s d&rsquo;huile d&rsquo;olive, faites revenir les keftas pendant environ 12 minutes en les retournant r\u00e9guli\u00e8rement pour les dorer sur toutes les faces. Vous pouvez ajouter un peu d&rsquo;eau en 2\u00e8me partie de cuisson pour \u00e9viter qu&rsquo;elles ne brunissent trop. En fin de cuisson, r\u00e9servez les keftas et ne rincez pas la po\u00eale. Ajoutez un fond d&rsquo;eau et faites r\u00e9duire un peu ce m\u00e9lange. Vous obtiendrez un petit jus pour arroser les keftas.
