Mixez puis transvasez dans un plat. Ajoutez les zestes de l&rsquo;orange, salez, poivrez et m\u00e9langez. Formez 12 boulettes et r\u00e9frig\u00e9rez une trentaine de minutes. Mouillez vous un peu et r\u00e9guli\u00e8rement les mains pour former les boulettes afin que la p\u00e2te colle moins \u00e0 vos mains.<\/li><li id=\"wpzoom-rcb-direction-step-65d907e8972b6\" class=\"direction-step\">Torr\u00e9fiez les amandes effil\u00e9es quelques minutes dans une po\u00eale \u00e0 sec.<\/li><li id=\"wpzoom-rcb-direction-step-65d907e8972b4\" class=\"direction-step\">Pressez le jus de l&rsquo;orange (ou des oranges) afin de r\u00e9cup\u00e9rer 10cl de jus. M\u00e9langez avec la c \u00e0 s rase de farine d&rsquo;orge mond\u00e9 (il ne doit pas y avoir de grumeaux).<\/li><li id=\"wpzoom-rcb-direction-step-65d907e8972b5\" class=\"direction-step\">Faites chauffer la cr\u00e8me de soja avec la 1\/2 c \u00e0 c de curcuma. M\u00e9langez \u00e0 l&rsquo;aide d&rsquo;un fouet. Quand elle fr\u00e9mit l\u00e9g\u00e8rement, ajoutez le m\u00e9lange jus d&rsquo;orange\/farine. M\u00e9langez sans cesse pendant environ 5 minutes afin que la sauce \u00e9paississe puis arr\u00eatez la cuisson. Mettez d\u00e9licatement (une \u00e0 une) les boulettes. Retournez les d\u00e9licatement puis, une fois dor\u00e9es sur toutes les faces (environ 3 minutes en tout), ajoutez 3 c \u00e0 s de sauce cr\u00e9meuse \u00e0 l&rsquo;orange. Couvrez et laissez cuire 7 minutes suppl\u00e9mentaires \u00e0 feu plut\u00f4t doux en remuant de temps en temps.<\/li><li id=\"wpzoom-rcb-direction-step-17087227587326616\" class=\"direction-step\">Sur les assiettes, disposez un peu de sauce puis 3 boulettes de saumon.
